If you visit us in Sabaneta, just a short walk from the main square, you’ll enjoy our micro-lots of specialty coffee (washed, honey, natural), prepared using a variety of brewing methods — espresso, V60, Chemex, French Press, AeroPress, and our famous Cold Brew. We also serve a wide selection of hot and cold coffee-based drinks, along with the most delicious fine pastries, baked goods, and even ice-cold beer — for a truly unforgettable gastronomic experience.

Specialty Coffee

Our coffee is grown, dried, and fermented using different processing methods: washed, honey, and natural. Each one brings out unique flavors and textures in the cup. You can choose your preferred process and enjoy a distinct sensory experience with every micro-lot.



OUR FARM-CRAFTED SPECIALTY COFFEES




"Washed" Coffee Bags (Ground or Whole Bean)

In this process, we remove the outer skin of the coffee cherries and subject them to a fermentation process in water, where the mucilage surrounding the beans breaks down and is removed through washing. The beans are then sun-dried. This method produces a coffee with clean, bright profiles in the cup, featuring fruity notes and pronounced acidity.

"Honey" Coffee Bags (Ground or Whole Bean)

For this coffee, we remove the outer skin without eliminating the mucilage, the viscous and sugary layer surrounding the beans inside the coffee cherry. We ferment and then sun-dry the beans. The resulting profile is a blend of sweetness and body, with moderate acidity and greater complexity.

In this process, after fermentation in tanks, we fully sun-dry the ripe and overripe cherries without pulping or washing them. This process enhances the sweet and fruity notes, creating a more intense flavor profile, with a fuller body and low acidity.

This  breathtaking view from El Rosal farm offers a glimpse into the richness of Antioquia's soil, a land of diverse altitudes and microclimates that gives Colombia its abundance of crops and the unique flavor that defines our coffee.
